Badam hareera

Badam hareera is a simple and yet rich dessert which can be made easily...
Ingredients:
Milk:2 glasses,low fat
Almond powder:3 tbsp
Sugar:4 tbsp
Semolina:1 tbsp(rava)
Cardamom powder:1/4 tsp
Preparation:
Take a bowl and put all the above ingredients in it..
Mix all the ingredients well…
Pour the contents of the bowl to the pan..
Keep the pan on medium heat..
Keep on stirring the mixturein the pan  till any lumps formed are dissolved..
Keep stirring for another 5 minutes..
Once the mixture begins to thicken,remove from heat…
Enjoy the badam hareera…


Chilled pasta salad

Chilled pasta salad makes a yummy salad..Kids will love this salad...
Ingredients:
Wheat pasta:200 grams,boiled
Cabbage:75 grams
Red capsicum:1
Green capsicum:half
Yellow capsicum:half
Cucumber:1/4 cup,chopped
Tomato:1/4 cup,chopped
Spring onion:1/2 cup
Carrot:50 grams,chopped
Cheese:1/4 cup,grated
For the dressing:
Olive oil:4 tbsp
Green chilli sauce:1/2 tbsp
Garlic paste:1/2 tbsp
Salt:1/2 tsp
Sugar:1/2 tbsp
Lemon juice:1/2 tbsp
White vinegar:1/2 tbsp
Preparation:
Take the boiled pasta in a bowl..
Add the finely chopped cabbage,cucumber,green capsicum,yellow capsicum,red capsicum,spring onions and carrot..
Mix well..
Add the chopped tomato..
For the dressing-
Mix all the dressing ingredients in a mixer..
Add the ground dressing to the salad..
Keep this in the fridge for an hour..
Finally add the grated cheese to the prepared pasta salad..
Chilled pasta salad is ready!

Gingered potatoes

Gingered potatoes is a simple spicy side dish..
Ingredients:
Potatoes:500 grams,chopped in to chunks
Vegetable oil:2 tbsp
Ginger:2 cm,grated
Green chilly:1,chopped
Cashew nuts:25 grams
Boiling water:2.5 tbsp
Butter:50 grams
Preparation:
Cook the potatoes in a pan of boiling water for about 10 minutes..
Drain well..
Heat the oil in a pan and the boiled potatoes…
Cook over medium heat and keep on stirring constantly..
Stirring prevents the potatoes from sticking to the pan surface..
Cook for about 2 to 3 minutes..
Noe add the grated ginger,chopped chilly and the cashew nuts and cook for about 2 minutes…
Add the butter to the pan and lower the heat…
Now cook the potatoes on low heat till the potatoes become tender..
Transfer the gingered potatoes to a serving dish..
Enjoy the gingered potatoes..

Spicy scallops

Spicy scallops is a simple and tasty stir fry made with lime rind and lime juice..
Ingredients:
Large scallops:15
Butter:10 grams
Vegetable oil:1 tbsp
Garlic:1 tsp,crushed
Ginger:1 cm,grated
Spring onions:1 bunch,finely chopped
Lime:1,grated(lime rind)
Lime juice:3 tbsp
Salt to taste
Pepper to taste
Clean the scallops well..
Trim the scallops to remove any black intestine..
Wash again..
Now heat the butter in a pan along with the vegetable oil..
Add the crushed garlic and grated ginger…
Stir fry for a minute..
Add the finely  chopped spring onions and saute again..
Finally add the scallops and stir fry for about 5 minutes..
Add in the grated lime rind and lime juice and cook well..
Serve the scallops !!

Lychee and ginger sorbet -Homemade Lychee and ginger icecream

Lychee and ginger sorbet is pretty quick and simple to make..It can be enjoyed with fruit salad..
Ingredients:
Lychees in syrup:400 grams(canned)
Lime:1,finely grated(rind)
Lime juice:2 tbsp
Ginger syrup:3 tbsp
Egg whites:2
Preparation:
Drain the lychees well..
Keep the syrup aside for later use…
Now add the lychees along with the lime rind,lime juice and ginger syrup to a mixer…
Grind till the mixture is completely smooth…
Pour this to a bowl…
Now mix the prepared puree with the lychee syrup…
Then pour in to a container..
Freeze for about 1.5 hours…
Remove from the freezer and whisk to break the ice crystals…
You can also do this in a mixer…
In another bowl whisk the egg whites until stiff..
Now fold in to the frozen mixture…
Transfer this to the container again…
Freeze for another 5 to 6 hours..
Enjoy the homemade lychee and ginger sorbet!

Melon:750 grams

Preparation:
Take the melon and peel off the skin..
Now deseed the melon..
Chop off chunks of melon..
Add the melon chunks,ginger wine and lemon juice in a mixer..
Blend on high speed till the mixture is completely smooth..
Now take tall glass tumblers…
Add the crushed ice to the tall tumblers…
Then pour the prepared juice over the crushed ice…
Melon and ginger crush is ready!

Bread sticks

Bread sticks are really yummy..They serve as a finger food for toddlers..
Ingredients:
White flour:700 grams
Salt:2 tsp
Fresh yeast:20 grams
Sugar:2 tsp
Tepid milk:375 ml(lukewarm)
Butter:50 grams,melted
Preparation:
Grease a large baking sheet..
Sift the flour and salt in to a bowl..
Blend the yeast with the sugar and half of the tepid milk..
Now make a well in the centre of the flour and put in the yeast mixture..
Sprinkle with flour and leave in a warm place for 15 minutes until spongy..
Add the remaining milk and melted  butter and mix to a firm dough..
 Lightly flour the working surface and knead for 5 minutes..
Cover with a clean damp tea towel and leave to rise for 15 to 20 minutes..
Lightly flour the working surface again..
Knead for 3 minutes again…
Divide the dough in to small pieces and roll in to sticks of 15 to 20 cm thickness…
Place on the baking sheet and cover with a clean damp tea towel..
Bake in the oven at 200 degrees for about 8 to 10 minutes..
Reduce the oven temperature to 180 degrees and bake for another 20 minutes…
Cool on a wire rack..
Bread sticks are ready!

Cold cucumber soup

Cold cucumber soup is a cool,creamy and refreshig bowl of chilled soup..
Ingredients:
Cucumbers:2,peeled
Walnuts:100 grams,chopped
Olive oil:25 ml
Chicken stock:250 ml
Garlic clove: 1clove
Salt to taste
Pepper to taste
Yoghurt:250 ml
Preparation:
Cut the cucumbers in to small pieces or dice them..
Place them in a bowl and add the chopped walnuts,olive oil,chicken stock,crushed garlic,salt and pepper powder…
Mix the contents well …
Cover the bowl with a cling film..
Chill in the fridge for atleast 8 hours…
Just before serving whip in some yoghurt and enjoy the bowl of  cold cucumber soup!

Spiced lentil and carrot soup

Spiced lentil and carrot soup is a substantial soup for cold wintry days with the goodness of carrot and lentils in it...
Ingredients:
Butter:50 grams
Carrots:200 grams,peeled and grated
Onion:1,finely sliced
Cardamoms:10
Lentils:50 grams
Chicken stock:1 litre
Salt to taste
Pepper:a pinch
Preparation:
Melt the butter in a heavy pan and add the carrots and onion…
Cook for about 5 minutes…
Crush open the cardamoms and crush the seeds using a mortar and pestle..
Now add the crushed seeds to the pan…
Add the lentils also and cook for another 2 minutes…
Add the chicken stock and bring to a boil…
Cook till the lentils become tender..
Finally add the salt and pepper powder..
Enjoy the bowl of spiced lentil and carrot soup!

Nutty biscuit chocolate

Nutty biscuit chocolate is a no bake biscuit that kids will love..You can get your kids also make this biscuit..
Ingredients:
Crushed marie biscuits:1 bowl(10 biscuits)
Crushed mixed nuts:1 small bowl(100 gms)(walnuts,hazel nuts,cashew nuts,ground nuts)
Chocolate biscuits:1 small bowl(6 biscuits)
Condensed milk:1 small tin
Grated coconut:1 small bowl
Silver foil paper:1 small sheet
Preparation:
Mix well in a bowl crushed biscuits,nuts and the chocolate biscuit powder…
Pour condensed milk and mix well in to a thick cream..
On a silver foil paper sprinkle grated coconut…
Spread the above mixture on top of the grated coconut..
Roll the aluminium foil…
Place this in the freezer for four hours..
Cut in to small pieces and serve the nutty biscuit chocolate!

Maggie sprout salad

Maggie sprout salad - try this amazing and simple salad..
Ingredients:
Sprouted beans:1/2 cup
Maggie noodles:1 packet
Cucumber:1,chopped
Carrot;1,chopped
Lettuce:as required
Tomato:1,chopped
Jalapeno;1,chopped
Cream:1 tbsp
Vinegar:1 tsp
Vegetable oil:1 tsp
Olive oil:1 tbsp
Preparation:
Boil the sprouted beans for two minutes..
Add salt to taste..
Sieve it and let it cool..
Take two cups of water and then add salt,vinegar,oil and turmeric in to it…
Bring this to a boil…
Add the maggie noodles..
Cook for two minutes…
Sieve it and let it cool…
Place the sprouted beans on the salad plate and put the noodle around it…
Now add the chopped carrot and cucumber…
Place everything on a bed of lettuce leaves..
Pour olive oil over the salad for taste..
Top it up with some cream..
Enjoy the maggie sprout salad!

Chicken soup flavoured with tamarind

Tamarind flavoured chicken soup is a tangy soup with chicken pieces in it..Try this out...
Ingredients:
Garlic:1 tbsp,chopped
Onion:1,sliced
Ginger:1 cm,sliced
Cooking oil:2 tbsp
Tomato:1,sliced
Chicken:3 cups,cut in to small pieces
Fish sauce:1 tbsp
Water:3 cups
Tamarind seasoning:2 tbsp
Long beans:1 cup,chopped
Long green pepper:1 piece
Preparation:
Fry garlic in cooking oil..
Add onion,ginger and tomato…
Add chicken and stir fry and season with the fish sauce..
When the chicken is almost done add water and bring to a boil..
Add the tamarind seasoning,long beans and the long green pepper..
Continue cooking till the vegetables are done..
Enjoy the chicken soup flavoured with tamarind!


Fruit cake

Fruit cake is pretty easy to make and iam sure everyone will love it as it is full of yummy nuts...
Ingredients:
All purpose flour:300 gms
Sugar:200 gms,powdered
Butter:180 gms
Eggs:4
Cocoa powder:20 gms
Baking powder:1 tsp
Soda bicarbonate:1 tsp
Vanilla essence:1 tsp
Garam masala:15 gms(cloves,cinnamon,cardamom powder)
Nuts:250 gms(cashew,almond,black raisins)
Sugar caramel:7 tbsp sugar and ½ cup water
Salt to taste
Preparation:
Sift the flour,salt,baking powder,cocoa powder and soda bicarbonate…
In a pan put 7 tbsp of sugar and keep it on low flame..When the sugar turns in to caramel add ½ cup of water and allow it to cool..
Soak the nuts in water a day before or you can just add 1 tbsp of maida to the nuts and mix well before adding nuts to the cake…
Pre-heat the oven to 180 degrees …
Blend butter and add the sugar and the well beaten eggs..
Transfer this to the prepared caramel and the flour mixture..
Finally add the nuts along with the garam masala and fold in gently..
Pour the prepared cake batter in a greased pan and bake for 45 minutes..
Enjoy this amazing fruit cake!!

Tomato cups

Tomato cups-an appetising way to have a salt less meal!It makes  a great salad too!..
Ingredients:
Tomatoes:2,firm and large
Cabbage:1cup,chopped finely
Capsicum:1 tbsp,chopped finely
Onion:1 tbsp,chopped finely
Carom seeds:1 tsp,dry roasted
Red chilli powder:1/2 tsp
Hung low fat yoghurt:1/4 cup
Preparation:
Cut the tomatoes  in to half horizontally..
Scoop out the seeds..
Mix the carom seeds,cabbage,capsicum and onion…
Stir over high heat till they blend well..
Allow this mixture to cool..
Then add in the yoghurt and red chilli powder..
Now fill the tomato cups with the prepared mixture..
Chill in the refrigerator and serve!

Baingan ka bharta

Baingan ka bharta is a popular side dish which goes with roti or rice..Brinjal lovers will adore this preparation..
Ingredients:
Brinjal:1 kg(Egg plant)
Oil:200 gms
Onion:1/2 kg,chopped
Tomatoes:200 gms,chopped
Yoghurt:100 gms
Red chilli powder:40 gms
Cumin powder:25 gms
Coriander powder:50 gms
Salt to taste
Preparation:
Bake the brinjals(egg plants) on low flame and remove the skin..
Heat a pan,add oil and keep on stirring it all through the process..
Pu in the chopped onions and after 15 minutes add the ginger and garlic paste..
After 10 minutes add in the chopped tomatoes..
Later on add the yoghurt..
Finally mix all the spices and mix well and after 10 minutes,add the baked brinjals..
Let it cook on simmer for 10 minutes..
Enjoy with roti or rice!

Shahi vegetarian egg curry

Shahi vegetarian egg curry is such an innovative curry that you will enjoy making it..
Ingredients:
Onion paste:1/2 cup
Ginger paste:1 tsp
Tomato puree:1 tsp
Yoghurt:1/2 cup
Water:2  and ½ cups
Cashew nuts paste:1/2 cup
Nestle cream:1 tbsp
Salt:1 tsp
Red chilli powder:1/2 tsp
For eggs:-
Homemade paneer:1 cup,shredded
Potatoes:1/4 cup,boiled and mashed
Corn flour:1 tbsp
Oil for deep frying
Turmeric powder:a pinch
Salt:1/2 tsp
Preparation:
To make the eggs,mix all the ingredients except oil and turmeric powder and make a soft and smooth dough..
Take out ¼ of the dough and mix the turmeric powder in it..
Make 4 small oval shaped balls with this part of the dough..
Cover each yellow ball with white part of the dough and make the egg shaped balls..
Deep fry these egg shaped balls till light brown…
Cut each egg longitudinally and keep them aside..
For the gravy,take oil in a flat pan and fry onion ginger paste till transparent…
Add tomato puree,yoghurt,cashew nut paste,salt,chilly and turmeric powder…
Fry for 10 minutes…
Keep stirring in between…
Add water and allow to simmer for five minutes…
Enjoy the yummy shahi vegetarian egg curry!!

Potato stuffed idlis

Potato stuffed idlis - Easy to make and makes a great variety dish from the usual idlis..
Ingredients:
Idli batter:2 cups
Potatoes:2,cooked and mashed
Green chilli:3,finely chopped
Onion:1,finely chopped
Ginger:1 tsp,grated
Lemon juice:3 tbsp
For seasoning:
Oil:3 tbsp
Mustard seeds:1/2 tsp
Urad dhal:1 tsp
Chana dhal:1/2 tsp
Turmeric powder:1/2 tsp
Curry leaves:few
Preparation:
To prepare  stuffing:-
Heat oil in a pan..
Add all the ingredients mentioned for seasoning…
Saute onion till done…
Add grated ginger,chopped green chilli and curry leaves…
Now add mashed potatoes and fry for 2 minutes and put off the flame..
Now finally add lemon juice to the prepared mixture..
To prepare stuffed idli:-
Grease the idli mould..
Just pour ½ ladle of idly batter in the mould…
Make small balls with potato mixture and flatten it to get a vada shape…
Place it in the centre of the batter in the mould and pour more idli batter over the potato mxture to cover it completely to fill the mould..
Pressure cook without the weight for 8 to 10 minutes…
Allow 5 minutes standing time after putting off the flame..
Remove the idlis and serve hot with any chutney of your choice…
