Shahi vegetarian egg curry is such an innovative curry that you will enjoy making it..
Ingredients:
Onion paste:1/2 cup
Ginger paste:1 tsp
Tomato puree:1 tsp
Yoghurt:1/2 cup
Water:2 and ½ cups
Cashew nuts paste:1/2 cup
Nestle cream:1 tbsp
Salt:1 tsp
Red chilli powder:1/2 tsp
For eggs:-
Homemade paneer:1 cup,shredded
Potatoes:1/4 cup,boiled and mashed
Corn flour:1 tbsp
Oil for deep frying
Turmeric powder:a pinch
Salt:1/2 tsp
Preparation:
To make the eggs,mix all the ingredients except oil and turmeric powder and make a soft and smooth dough..
Take out ¼ of the dough and mix the turmeric powder in it..
Make 4 small oval shaped balls with this part of the dough..
Cover each yellow ball with white part of the dough and make the egg shaped balls..
Deep fry these egg shaped balls till light brown…
Cut each egg longitudinally and keep them aside..
For the gravy,take oil in a flat pan and fry onion ginger paste till transparent…
Add tomato puree,yoghurt,cashew nut paste,salt,chilly and turmeric powder…
Fry for 10 minutes…
Keep stirring in between…
Add water and allow to simmer for five minutes…

Hey Sameena, that's a cool idea. We are non egg-eaters and often wonder what to substitute for eggs in curry / pulao etc. Paneer seems to do the trick well. Love your blog :)
