Brinjal pulao makes a yummy one pot meal...
Ingredients:
Basmati rice:1/2 kg
Cardamoms:2
Cloves:3
Cinnamon:1/2 inch piece
Onion:2,large
Ghee:3 tbsp
Brinjal:1/4 kg
Mustard seeds:1/2 tsp
Turmeric powder:1/4 tsp
Grated coconut:2 tbsp
Black pepper:1/4 tsp
Coriander seeds:1 ½ tsp
Bengal gram dhal:1 tsp
Black gram dal:1/2 tsp
Red chillies:3
Asafoetida:a pinch
Salt to taste
Few curry leaves
Preparation:
Grind together grated fresh coconut,black pepper,coriander seeds,bengal gram dal,black gram dal,red chillies and a pinch of asafoetida..
Fry the ground ingredients in half a teaspoon of oil…
Wash and soak rice for 10 minutes…
Keep a heavy bottomed big vessel on fire with 2 tsp of ghee…
Fry cinnamon,cloves,cardamom and then chopped onion…
When it turns brown add rice and fry for few minutes…
Pour two cups of boling water and salt…
Mix well and cover and cook on low flame till the rice is cooked…
Remove from fire..
Heat the rest of the ghee in a pan..
Fry the mustard seeds,curry leaves and brinjals…
When the brinjals become soft,add the ground masala and fry till the aroma comes…
Remove from fire and replace the rice vessel on the fire and mix brinjal curry to that gently with another spoon of the ghee…
Keep on fire for a few minutes…
Enjoy the brinjal pulav….
