Nadan chicken roast

Nadan chicken roast is a kerala preparation and tastes delicious...
Ingredients:
Chicken:1 kg
Onions:1/2 kg
Few curry leaves
Chilli powder:1.5 tbsp
Coriander powder:1.5 tbsp
Turmeric powder:1 tbsp
Garam masala powder:1 tbsp
Pepper powder:1/2 tbsp
Vinegar:2 tbsp
Oil for frying
Salt to taste
Ginger:1 piece
Garlic:4 flakes
Fenugreek seeds:1/4 tbsp
Shallots:10
Preparation:
Cut the chicken in to seven pieces and marinate the chicken pieces with pepper powder,vinegar and salt for about 30 minutes…
Gind the ginger,garlic,fenugreek seeds and shallots in to a fine paste in a mixer and keep this aside..
Heat oil in a pan…
Shallow fry the marinated chicken over moderate heat till it is half cooked..
Heat oil in a vessel and add the chopped onions when it turns brown…
Add in the ground paste and curry leaves…
Cook for 2 to 3 minutes…
Add the chilli powder,coriander powder and turmeric powder and stir constantly over medium heat till the oil seperates..
Lower the heat and add fried chicken and half cup of water…
Cover and cook till the chicken is tender…
Now add the garam masala powder and cook for a few more minutes..
Serve hot with chapathis or naans..
