Caramel surprise

Caramel surprise is a sophisticated dessert..Can be made at home easily with this recipe...Follow this carefully...
Ingredients:
Biscuits
Eggs:800 gms
Egg yolks:200 gms
Sugar:500 gms
Flour:400 gms
Milk powder:50 gms
For the caramel-
Sugar:450 gms
Water:50 gms
For caramel mousse:
Egg yolk:400 gms
Gelatin:20 gms
Whipped cream:800 gms
Preparation:
Prepare the biscuits the day before..
Combine eggs,egg yolks and sugar together and beat in a mixer until smooth..
Then fold the flour and milk powder in to mixture with a wooden spatula..
Pour in a 20 cms diameter baking ring covered with baking paper…
Bake at 180 degrees for 20 minutes…
Let it cool down..
For the caramel-Bring to boil in a pan the sugar and water until caramelised..
For the caramel mousse-Beat egg yolks,add warm caramel in a steady stream and beat until completely cold..
Add gelatin soaked in water and then dissolved in a little bit of hot water…
Fold the whipped cream in to the mix..
Final set up:
Cut the biscuits in 2 thin layers with a bread knife..
Set the first layer in to the mould..
Pour half the caramel mousse..
Cover with second layer,add remaining mousse and spread out regularly with a spatula..
Store for 3 hours in the freezer…
Remove from the mould and slice in portions..
